The best ANZAC recipe for you Darlings

This is the best kind of recipe.  Handed down, passed around, tweaked to suit and best shared with friends, endless cups of tea and a nod to our ANZACs.

Ingredients

  • 1 cup self-raising flour
  • 1 cup coconut (the good kind)
  • 1 cup rolled oats
  • 1 cup brown sugar (you can halve this and they're still good)
  • 1/4 cup Chia Seeds
  • 1/2 Cup Almond Meal
  • 1/4 Cup LSA or Ground Flaxseed
  • 125 grams butter melted
  • 1 tbs golden syrup or honey
  • 1 tsp bicarb soda
  • 1 egg beaten

Method:

Preheat oven to 180 degrees celcius

Melt butter and golden syrup on stove then add bicarb to dissolve.  Stir til it's frothy

Sift flour into bowl then add the rest of the dry ingredients and give it a mix

Add butter mix to the dry ingredients

Stir all together

Roll into desired biscuit size patties and place on baking paper on a tray

Cook for 15 mins or so and let cool on the tray.

Variations:

Add dried cranberries, sultanas or raisins.

Add mixed seeds along with the chia

You can use GF flour and GF oats to make this recipe Gluten Free.

You can double this recipe easily

You can freeze these if they aren't all snapped up!
